Review: A very nice cheese that is not so strong that it will overpower other flavors.This is the first time I have ordered a wheel of cheese and I am happy that it was a good experience.I happen to like goat cheese but I also know that while living in the United States that I only get to experience a few different varieties.So I was happy to see this Manchego cheese. I’ve only had a small wedge of extra aged Manchego cheese before and it was too rich for my tastes. But when I saw a wheel of young Manchego cheese I had to purchase it.It’s still cheese, but this has so many possibilities that I probably won’t find all the uses before all seven pounds are gone. It also pairs well with Molinary and Sons hard salami.Using cling wrap works well for this cheese, but be sure to let the cheese dry before cutting into it or wrapping.
